My husband and I recently had the pleasure of doing just that at Numie in Coles Bay, Tasmania—a place that feels like it was designed to remind you of the simple luxury of slowing down.
From the moment we arrived, it was clear that Numie is more than just a place to stay—it’s an experience. One of the highlights of our stay was the opportunity to indulge in fire cooking. There’s something so primal and satisfying about preparing a meal over an open flame, and Numie provides the perfect setup for it with the outdoor wood fire grill and pizza oven . As the fire crackled and the sun dipped below the horizon, we cooked, laughed, and created some cherished memories. We also had the privilege of hosting a private chef, Chris from What Grows, who crafted a four-course meal that was nothing short of spectacular. Every dish was a celebration of local ingredients, expertly prepared and beautifully presented. It was an intimate, gourmet experience that added a touch of luxury to our stay and I highly recommend this experience for the foodie at heart!
Our adventure didn’t end there. We took a day to explore Bicheno, a charming coastal town just a short drive away. Our destination was Waubs Harbour Distillery, where we indulged in a whisky tasting. The distillery itself is steeped in history and character, and each sip of whisky was a journey through the rich, complex flavors that Tasmania’s pristine environment brings out in its spirits.
As our time at Numie came to an end, we left feeling more connected than ever—to each other, to the land, and to the spirit of exploration that brought us there in the first place. It’s a place where time slows down, where the pressures of daily life fall away, and where you can simply be present with the one you love.
